The tower houses one of the world s largest selections of more than 10,000 bottles of wine. Aureole Las Vegas serves beef tortellini, scallop ceviche, spicy celery remoulade, house smoked salmon and spicy tuna cannelloni. The restaurant s main course menu includes pinot noir-braised lamb shank, oven-roasted Tasmanian trout and fresh fettuccini pasta with roasted tomato.
